Paprika, cumin and a touch of cinnamon give the chicken a deep aromatic flavour, while fresh greens add crunch and balance. A generous layer of hummus ties everything together with smooth savoury richness. Ingredients

- 10 oz chicken breast or thigh fillets (300 g)
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground corriander
- ½ tsp ground ginger
- Pinch cayenne
- Salt and black pepper, to taste
- 2 flatbreads or large tortillas
- 4 tbsp hummus
- A handful of lettuce leaves or mixed greens
- 1 tbsp olive oil (15 ml)
- 1 tsp Ras el Hanout
Instructions
Cut the chicken into thin strips.

In a small bowl, mix paprika, cumin, cinnamon, corriander, ginger, cayenne, salt, ras el hanoutand pepper.

Heat olive oil in a skillet over medium heat. Sauté the seasoned chicken for 6–8 minutes, stirring occasionally, until fully cooked and golden.

Spread 2 tablespoons of hummus onto each flatbread or tortilla. Layer with lettuce or mixed greens and top with the warm chicken.



Roll each flatbread tightly into a wrap. For extra crispness, toast the wraps in a dry skillet for 1–2 minutes per side.


Slice in half and serve warm, or wrap in foil for an on-the-go meal.
