This cozy one-pot lasagna pasta is rich, filling, and perfect for those evenings when you want something satisfying but simple to make.

Everything cooks together in one pot, allowing the savoury meat, rich marinara, tender pasta, and melted cheese to blend into a creamy, flavour-packed dish. It has all the depth and comfort of traditional lasagna, but with a much easier, fuss-free approach that makes it ideal for busy weeknights or relaxed family dinners.

Yield: 3-4 cups of lasagna soup

Equipment:

Large Pot

Prep Time: 15 minutes

CookTime: 30-35 minutes

Ingredients:

  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon basil
  • ½ teaspoon fennel seeds
  • 1 teaspoons salt
  • 2 teaspoon italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • 24 ounces Marinara sauce
  • 2 tablespoons tomato paste
  • 5 c beef broth
  • ½ box Lasagna, broken up
  • ½ cup heavy cream
  • Toppings
  • Parsley
  • Spinach
  • Parmesan cheese

Directions:

  1. In a large pot over medium heat, add the garlic and onions. Let them cook and become slightly transparent before adding in the ground beef.
  1. Cook the meat until completely browned. Season the meat with all the seasonings. Stir together.
  1. Then add the marinara sauce and tomato paste, stirring over the heat until combined and bubbling.
  1. Pour in the beef broth and break the lasagna into pot. Stir and completely submerge the uncooked lasagna in the pot.
  1. Turn the heat down to low and let the lasagna soup simmer and cook for 20-25 more minutes, or until the lasagna becomes tender and al dente.
  2. Add in your desired amount of spinach and parsley and stir together until the spinach has softened from the heat and blends into the pasta soup.
  1. Serve while warm and top with more chopped parsley and parmesan cheese.
