Ingredients:

- Cookie Dough
- 1 cup unsalted butter, softened
- 1 cup white granulated sugar
- 2 egg
- 1 teaspoon vanilla extract
- 3 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup sprinkles
- 3 cups vanilla ice cream
Directions:
- Preheat the oven to 350 degrees Fahrenheit and prepare 2 baking dishes with parchment paper.
- In a mixing bowl, add the softened butter and white sugar. Blend together until combined.

- Then add in the eggs and vanilla extract. Mix again until smooth.

- Then add in the flour, baking soda and salt. Fold these dry ingredients into the wet until a thick dough is formed. It may start crumbly, but as you continue to mix the batter will become more dough like.


- Pour in the sprinkles and fold into the sugar cookie dough, spreading evenly.

- Split the dough in half and place half into the first prepared baking dish and half into the second. Press the dough into each pan evenly.

- Bake in the oven for 22 minutes, then remove from the oven and let the 2 sugar cookie slabs cool completely.

- Remove the ice cream from the freezer 15 minutes before ready to use.
- Take one pan of sugar cookie and place softened vanilla ice cream on top, spreading evenly, filling the baking dish to the top.

- Then remove the second cookie dough square from the other pan, removing the parchment and placing on top of the ice cream.

- Freeze these ice cream cookie sandwiches for at least 4 hours or overnight.
- Remove from the freezer, cut into squares and enjoy!
