Raspberry Fudge Parfait is the kind of dessert that looks impressive but comes together with very little effort. Layers of rich chocolate mousse, sweet-tart raspberry sauce, and soft brownie bits make every spoonful creamy, fudgy, and full of flavour. It is a simple no-bake treat that feels special enough for parties, date nights, or anytime you want an easy dessert that tastes bakery-worthy.

Yield: 4 servings

Equipment:

  • Piping Bag
  • Metal Star Piping Tip
  • Serving cups

Prep Time: 10 minutes

Cook Time: 8 minutes

Idle Time: 10 minutes

Ingredients:

Chocolate Mousse

  • 1 ½ cups heavy whipping cream
  • ⅓ cup cocoa powder
  • ⅓ cup powdered sugar
  • ¼ teaspoon espresso powder

Raspberry Sauce

  • 1 cup raspberries
  • 2 tablespoons white granulated sugar
  • Brownie bits
  • Extra raspberries

Place a large mixing bowl in the freezer for 10 minutes to chill.

Pour the heavy cream into the chilled bowl and use a hand mixer to beat for one 1 minute until frothy.

Then add all the powdered sugar, cocoa powder and espresso powder, mixing on medium/high speed until slightly stiff peaks have formed. Pour into a piping bag fitted with a start tip and set aside.

In a saucepan place the raspberries and sugar over medium heat. Mash the raspberries slightly while mixing with the sugar in the pan.

Let cook over the heat for 8 minutes stirring every couple minutes until a bubbly sauce has formed.

Strain the mixture into a bowl removing the raspberry seeds and mashing any other raspberry chunks through the strainer.

Assemble your parfaits by piping mousse in the bottom of your serving cup

Then adding a layer of raspberry sauce.

Then a layer of brownie bites.

Repeat this until the serving cups are full
