Ingredients:

For the cupcakes:
- ½ cup unsalted butter, softened
- ¾ cup sugar
- 2 eggs
- ¼ cup oil
- 1 teaspoon vanilla
- ½ cup milk
- 1 ½ teaspoon baking powder
- ½ teaspoon salt
- 1 ½ cup flour
For the frosting:
- 1 cup unsalted butter, softened
- 4 cup powdered sugar
- 1 teaspoon vanilla
- ½ teaspoon salt
- 2 tablespoon milk
- Pink food coloring
- Blue food coloring
- Pink, blue and white sprinkles, to fill and decorate

Directions:
Preheat the oven to 350 degrees. Line a standard muffin tin with cupcake liners and set aside.
For the cupcakes – in the bowl of a stand mixer, combine the softened butter and sugar. Cream until smooth, scraping down the sides as needed.

Add in the eggs, vanilla, oil and milk. Mix well, scraping down the sides often.

Add in the salt, baking powder and flour. Mix thoroughly, scraping down the sides as needed.


Using an ice cream scoop or similar, divide the batter between the cupcake liners – filling about ½ – ¾ full. Bake in the preheated oven for approximately 14 minutes – the centers should be set and just beginning to brown around the edges. Allow to cool completely before decorating.

For the frosting – in the bowl of a stand mixer, combine the softened butter and about half of the powdered sugar.

Mix on low speed until combined. Add in the remaining powdered sugar, milk, vanilla and salt. Mix on low until combined and then bump up the speed to medium in order to whip the frosting until smooth and creamy.

Divide the frosting between two bowls. Tint one bowl pink and the other blue.

Add the blue frosting to one side of the piping bag and spread upwards. Add the pink frosting to the other side of the piping bag so that the piping bag contains both colors equally and will swirl when piped.
Once the cupcakes are cooled completely, begin assembly.
Use a teaspoon or similar to remove the center out of each cupcake. You can retain or toss, your choice.

Fill the cavity of each cupcake with the appropriate sprinkles – pink OR blue based on your reveal.

Pipe a large dollop of the frosting over the sprinkles, ensuring that they are completely concealed.

Sprinkle with additional sprinkles to decorate.
