These Strawberry Shortcake Cups are a fun and easy twist on the classic dessert. Layers of soft vanilla cake, sweet glazed strawberries, and fluffy cream cheese whipped filling come together in individual mason jars for a beautiful treat that is perfect for parties, picnics, and summer gatherings.

Using a simple box cake mix keeps this recipe quick to prepare while still delivering the fresh flavor everyone loves in strawberry shortcake. The layered presentation makes these jars look impressive, but they are surprisingly easy to assemble and perfect for serving a crowd.

Mason Jars

9×11 inch pan

Hand Mixer

Prep Time: 20 minutes

Bake Time: ~30 minutes

Idle Time: 20 minutes

Ingredients:

Cake:

  • Vanilla Box Mix + Ingredients

Strawberries & Glaze:

  • 4 cups strawberries, sliced
  • ½ cup strawberry Glaze
  • ½ cup white granulated sugar

Cream:

  • 6 ounces cream cheese
  • 1 teaspoon vanilla extract
  • 1 ½ cups powdered sugar
  • 8 ounces whipped topping

Directions

Use any vanilla box mix plus its specified ingredients and mix together in a bowl. Bake for designated time in a square 9×11 inch pan.

Once removed from the oven, let cool for 20 minutes.

While the cake is cooling, create the cream mixture. Beat the cream cheese for a couple minutes until it has lightened in color a bit.

Add the 1 ½ cups of powdered sugar and blend together with a hand mixer.

Take the cold whipped topping and fold with the cream cheese mixture until combined. Set aside in the refrigerator.

For the strawberries and glaze, slice the strawberries into thin pieces. Add the white sugar to the strawberries and stir together.

Then add the strawberry glaze and coat the strawberries thoroughly. Set aside.

Once the cake has cooled. Cut the vanilla cake into small cubes.

Fill the bottom of each mason jar with a large spoonful of the whipped cream cheese.

Top that with some of the strawberries and glaze.

Continue the next layer with several cake cubes.

Repeat this process until your mason jars are completely full.

Notes:

  • These are best enjoyed the day of because the glaze with the cake can become soggy after longer than a day.
  • If you have extra strawberry shortcake ingredients, store separately and assemble the day you want to enjoy the dessert!
