Welcome to my kitchen! Today, I’m excited to share one of my all-time favorite recipes: Roasted Cherry Tomato and Burrata Bruschetta. This dish holds a special place in my heart because it reminds me of a memorable trip I took to Italy with my children. We spent our days exploring charming villages, savoring gelato, and enjoying the vibrant local markets.

One evening, we stumbled upon a quaint trattoria where this delightful bruschetta was the star of the menu. The combination of sweet roasted cherry tomatoes and creamy burrata was simply divine, capturing the essence of Italian cuisine in every bite. I knew I had to recreate it at home to share that beautiful experience with my family.

This recipe is not only quick and easy to prepare but also bursting with fresh flavors that bring a taste of Italy right to your table.

Servings: 2-4

Prep time: 5 minutes

Cook time: 25 minutes

Ingredients:

  • 1 pint cherry tomatoes
  • 4 oz burrata cheese ball
  • 1 small shallot, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil leaves, chopped

For serving:

  • 1 baguette, sliced (optional)
  • 1 tbsp balsamic glaze

Instructions:

  • Preheat your oven to 375°F (190°C).
  • In a baking dish, combine cherry tomatoes, chopped shallot, minced garlic and olive oil. Toss to coat the tomatoes evenly.
  • Roast the tomatoes in the preheated oven for about 20-25 minutes or until they start to burst, releasing their juices. Then top roast on high for about 2-3 minutes to brown the top.
  • Once the tomatoes are done, remove them from the oven and let it cool for about 5 minutes.
  • Then sprinkle chopped fresh basil over them, season with salt and pepper, place the burrata on top of the tomatoes.
  • Finish by drizzling balsamic glaze over the bruschettas.
  • Serve with crostinis, cracker or bread.
